Sticky lemon chicken (Gordon Ramsay's recipe)

Sticky lemon chicken











I got Gordon Ramsay's cookbook as one of our wedding gifts.
This cookbook includes so many of SIMPLE cooking, so I did not really appreciated for what I have until I actually executed some dishes in the book.

For the fact of how easy this recipe is, 
and how easily you can execute as his recipe pictures show,
this is worth to try!!



Ingredients:

1 lb chicken thigh, about 8-10 (I used skinless/boneless)
4 tablespoons olive oil
2 tablespoons soy sauce
4 tablespoons honey
1 head garlic, each clove sliced in half
1 whole lemon, Sliced
1/4 cup fresh parsley (or you can use 2tbs dried parsley instead)
1/4-1/3 cup water
(1 tablespoon thyme, I skipped. I do not like Thyme...)
salt and pepper


Directions:

Season the chicken well with salt and pepper.

In a large skillet pan, add the oil to Med/High Heat.  
Add the chicken to the skillet and cook for about 5-6 minutes, brown both sides of each piece.

Add the garlic, soy sauce, and honey to the pan, making sure to get all the chicken in the sauces. 
Shake the pan so soy/honey will be mixed well.

Continue to cook for a 5 minutes.

Splash the water and lay the slices of lemon on top of the chicken in the pan. 

Put a lid on the pan and continue to cook for about 10-15 minutes with Low/Med heat (until sauce turns to sticky).

Season the chicken with thyme and parsley. 



I dont have enough lemon, so I used lime to.
Late I solely used lemon, and that taste better.

I tried this recipe three times already!


* If you use chicken with bones, it will take longer to cook.
I don't like diced garlic with it, I prefer haft sliced garlic just for taste.
 Be patient to make a sticky sauce!






Again, Very EASY.

Me and my friend (out-of-town) friend have no clue for this place,
we just passed by Bank St. and saw the sign of the Bakery.

And we decided to stop for coffee and cookies!

As soon as we enter Bread & Sons Bakery, 
we changed our mind, and decided to have seats and PIZZA!

I do not know the name of this pizza, but it has tasty tomato sauce,
and cheese/veggies!






We picked a slice of pizza for each of us,
they offer us to warm our pizza at the counter.



Initially, i meant to use fork and knife like a lady,

but whatever!

forget it.

Let me eat my pizza.



 It is thin dough pizza, and I loved it! 

And i was not the only one who loved this place! 
How come I did not know about this place for so long!!!!

They now offer Fri and Sat night pizza!

Shrimp Stir-Fry



Shrimp and Scallion Stir-Fry



Shrimp and Scallion Stir-Fry served with rice



Ingredients

·         1 tablespoon vegetable oil
·         1 pound large shrimp, peeled and deveined
·         garlic cloves, minced
·         1/2 teaspoon red-pepper flakes
·         2 bunches scallions, cut into 1 1/2-inch pieces
·         2 tablespoons fresh lemon juice
·         Coarse salt
·         Cooked rice, for serving


Direction:

1.                  Heat a large skillet or wok over high until hot.
2.      Add oil and swirl to coat skillet.
3.      Add shrimp and stir until almost entirely pink, 1 to 2 minutes.
4.      Add garlic and red-pepper flakes and stir until fragrant, 30 seconds.
5.      Add green onions (scallion) and stir until bright green, about 1 minute.
6.      Add lemon juice and 2 tablespoons water.
7.      Cook, scraping up any browned bits from skillet, about 1 minute.
8.      Season with salt and serve over rice.

Vietnamese Pho: Beef Noodle Soup



It is pretty simple and you will love it.

I did not try the authentic beef broth, since I do not have any of Chinese spices at home!

Otherwise, you can try what I did here.






I used homemade chicken broth for this noodle soup.
And Yes, it is perfectly fine.


You can use your own chicken broth, as long as you made it!

Just add,

1 tbs Soy sauce
0.5 tbs sugar  (Yes, big surprise!)
1 tbs fish sauce


starting from here,
and you add more for your taste.






the best this about homemade pho is that
you can add meat as much as you want.


Me and my hubby spent $7 for beef.
We went to T&T to purchase "hot pot" beef.





Also, I added Japanese fish balls and bok choi.

Nothing can go wrong with Pho.





If you have a chance to find this can of Pho broth,
I would recommend to buy it.

I added three times more water than it said when I use it, 
but this guarantees the taste of Pho at home.

It costs less than $2 per can.

Pecan and walnut: Toast chopped pecan and walnut on the medium heat
Arugula and spring mix

Dressing:
Apple cider vinegar (1)
Maple syrup (1)
EV Olive oil (1)
salt and pepper
